70cl / 43% - Baconara is a Mexican agave spirit that hails exclusively from the state of Sonora. Illegal from 1915 until 1992, it’s less known than mezcal or tequila but is a worthy peer. Metza is a great example of this, with peppery spice, crisp vegetal notes, chilli, floral aromas, mesquite smoke, light funk and gentle sweetness.
