Shimizu Tani garden is located in the Uji city prefecture Kyoto and widely regarded as one of the top two matcha producing regions of the world, the other being Nishio City prefecture in Aishi. Shimizu Tani translated means Clear Water Ravine, the plantation has been in the same family for seven generations dating back to the 17th century and was the very first to convert to organic growing in 1980, the plantation is considered small 30 acres in size.
