The VOS designation – which stands for vinium optimum signatum – is applied only to sherries matured at least 20 years in oak. Prolonged aging has lent this wine a complex nose with walnuts, raisins and roasted almonds that gives way to a dry yet fruity palate of apricots, blood oranges and lemon zest.
