70cl / 40% - An unaged mezcal from Ilegal, originally produced for the first mezcal bar outside of Mexico, Café no Sé in Guatemala, and thankfully now making its way into the wider world. This mezcal is made with agave Espadin in the town of Tlacolula in Oaxaca and boasts a green and spicy flavour profile, with notes of apple, bell peppers and white pepper.
